- Agri Segretum started in 2008 as an organic farm. The estate covers approximately 70 hectares, 10 of which are vineyards, along the Tiber Valley, in the Todi DOC wine region of Umbria.
Our production is artisanal. To increase biodiversity, maintain good soil structure, and improve the vegetative and productive activity of the plants and their resistance to drought and stress, we have been practicing various cover crops for years, such as inter-row sowing of clover and barley, green manure, and the use of manure and compost produced from the farm's biomass (prunings, stalks, pomace, and various cuttings).
All work in the vineyard and cellar is done manually, from pruning using the Guyot training system to harvesting and winemaking in the cellar. Our fermentations occur spontaneously, without the addition of commercial yeasts. We work late into the night to manually punch down the must. Finally, the wine rests and ages according to its own dictates. It is the wine that decides the start and end of malolactic conversion. It is always the wine that tells us when it's time for racking. Thus, the wine stabilization occurs naturally and spontaneously.
