- We produce on seven different hills with different soils and sun exposures, allowing us to grow
every single native grape variety in its perfect soil.
Every day of every year, we meticulously preserve all our ancient native grape varieties and
vineyards, not only because we are always curious to savor the surprising and fantastic aromas and
scents that emerge from their wines each year, but also to preserve them perfectly and pass
on this immensely precious genetic heritage to future generations.
Sometimes, to save these old vineyards, we must undertake heroic viticulture due to the slopes
of the land, which sometimes reach the limit of practicability.
Alcoholic and malolactic fermentations are completely spontaneous, using only indigenous yeasts and bacteria.
We produce our wines exclusively using the natural method, according to the current "Method Nature."
We do not add sulfites to our musts and wines. Our wines contain only a very low amount of natural sulfites, produced only by natural fermentation. This is to preserve our wine, which is not only
organic but also fully alive over time, allowing it to age without problems for several years.
We do not clarify or filter our wines, but rather allow our products to rest in vats and
barrels while awaiting the winter cold. Therefore, we use only two natural physical elements: cold and time!
We do not use fertilizers, only green manure. Thanks to the work of the roots of some herbaceous plants, we are able
to also preserve the waterways.
