Introduction to Castello di Stefanago (CdS)
Mission Statement
At Castello di Stefanago, we are dedicated to creating natural, organic wines that reflect the unique terroir of Lombardy’s Oltrepo Pavese hills. Our mission is to craft wines that celebrate the land, honor tradition, and embrace sustainable practices for future generations.
About Us
Castello di Stefanago is a family-owned winery, where generations of expertise and passion for the land have shaped our approach to winemaking. Located in the Oltrepo Pavese hills, our vineyards thrive in ideal soil and sun conditions. We are committed to organic and minimal-intervention practices, producing wines that are authentic expressions of time, terroir, and tradition.
Winemaking Philosophy
Our winemaking method is rooted in understanding each vintage and accompanying the grapes in becoming the best expression of the year. Each vineyard is treated as its own ecosystem, balancing biodiversity and soil vitality to produce strong, healthy vines. Timing is key in our hand-harvesting process, with each grape variety harvested at its peak ripeness. This connection to nature, combined with careful observation, makes each vintage distinct, capturing the essence of our sustainable, natural approach.
Product Information
Wine Lines Overview
Spumanti Ancestrali Stefanago: Crafted using the ancestral method, these sparkling wines are vibrant, fresh, and complex. Time spent on the lees with native yeasts brings depth, creating unique wines that evolve harmoniously with each vintage.
Stefanago Still Wines: This collection embodies elegance and balance, with single varietals and blends that express the richness of our terroir. The wines undergo minimal intervention, allowing each grape’s natural qualities to shine through.
Stefanago Other Wines: A collection of young, bold, and eccentric wines, including pét-nats, PIWI, ancestral, and orange wines. These wines are fun, approachable, and crafted for easy drinking, yet they require the skill of expert winemaking to achieve such quality and consistency.
