- THE VINEYARD
6 plots with very different terroirs were identified following soil analyses and various observations (wind, sun, altitude). These terroirs have one thing in common: an exceptional richness in magnesium and a very alkaline pH.
They are made up of variegated clays, sandstone-dolomite level, gypsum dating from 220 million years ago (Carnian and Norian era of the Triassic) formed by clay-sandy alluvium with gravel and pebbles, silts from the Holocene terraces.
The vines are planted on 2.25 /0.90 for a density of 5000 vines / ha.
In order to obtain very good ripeness, a large leaf area is sought by setting up very high trellises (a 60 cm bearing wire and 2 double lifting wires). The pruning put in place is respectful of the flow of sap.
The soils are grassed 1 row out of 2 and worked under the row.
For diseases, treatments are carried out with precision thanks to a sprayer with recovery panels which makes it possible to target the vine and spare the soil (copper and sulphur). For insect pests, observations, traps and sexual confusion are set up on all plots.

HARVESTING AND WINEMAKING
The collection is carried out by hand by a team of about ten people, in 10 kg boxes that are very sparsely filled to avoid any alteration of the grapes.
The crates are brought back on small trailers (50 crates per trailer) and deposited instantly in a cold room set at 8°C. The grapes are stored in this way until the next day in order to vinify intact grapes.
• White and rosé itinerary: filling the press by hand, pressing directly in an inert pneumatic press and filling the vats in the liquid phase by gravity.
• Red route: filling the destemmer by hand, destemming, sorting table, belt for destemmed grapes via a slide that brings the harvest by gravity directly into the vat on which an adjustable crusher is positioned. Devatting in comportes which are filled and poured by hand into the press.
All harvest transfers are carried out by gravity. We don't have a harvest pump in the cellar.
THE ASSEMBLIES
Thanks to the diversity of grape varieties and terroirs, the range of possible blends is particularly wide. The aim is to produce wines with a lot of complexity and drinkability.
Ready to drink quickly but with a significant capacity for ageing, powerful aromas, length in the mouth, tannins present but silky for the reds.
Freshness, minerality, amplitude, aromatic power for the whites and rosés.
Fermentation in new barrels has been chosen for some whites and the reds for laying down are aged in barrels for 12 months.
