- Since 2014 the Domain produces only Organic wine. Mechanical soil work. harverst by hand.
The estate extends over Marsannay, Fixin, and Gevrey-Chambertin.
The grape varieties are classic for Burgundy wines, namely Pinot Noir for red wines and Marsannay rosé, Chardonnay for white wines, and Aligoté for Bourgogne Aligoté.
The vineyard is managed with respect for winemaking traditions with the aim of obtaining high-quality grapes that have reached good maturity, prioritizing soil work to preserve environmental balance and respect for biodiversity. Respect for the expression of the terroirs has led Eric Guyard to produce multiple single-vineyard cuvées to illustrate their great diversity. For red wines, alcoholic fermentation lasts about 20 days with regular punch-downs to allow each cuvée to express its typicity. After pressing, the wines are placed in oak barrels for secondary fermentation and will remain there until bottling, approximately 18 months later. For white wines, after pressing, the musts are placed in oak barrels and will remain there through both fermentations and until bottling, 12 to 15 months later.
