ERIC CHEVALIER
Information
- Description
- A family estate for several generations, Gaëlle and Éric (brother and sister) now manage 30 hectares south-west of Nantes, in the Muscadet Côtes de Grand Lieu AOP.
In 2006, Éric took over from their father, who was already farming sustainably, and ten years later, quite naturally, converted the vineyards to organic farming.
The vineyard lies between the Atlantic Ocean, the Loire River, and the Grand-Lieu Lake nature reserve. This mild, maritime-influenced climate shapes the wines. The diversity of the soils highlights the full potential and richness of the Melon B grape, expressing the freshness and saline signature that define it.
A large part of the harvest is done by hand. Fermentations occur thanks to indigenous yeasts. Malolactic fermentation, generally completed and also spontaneous, helps stabilise the wine and often adds a silky texture on the palate.
Whenever possible, the wines are produced using gravity-flow methods, avoiding pumping to preserve the purity of the juice. Sulphites are used sparingly. Most wines are aged briefly on lees in tank, with the overall aim of crafting fresh, pure, saline, and airy wines.
