From olive groves and cereal fields to the flocks that once roamed its lands, every stone and furrow echoes with history.
Since 1978, the Bories family has cared for and cultivated this exceptional terroir, continuing a tradition with both reverence and vision. Today, the wines of Ollieux Romanis are the result of a steadfast commitment to heritage, sustainability, and creative evolution. They are wines that speak of their land, their people, and their enduring connection to the Boutenac region.
The estate lies within the Massif du Pinada, a rugged, pine-covered mountain range in the heart of the Corbières in southern France. This natural amphitheater offers an exceptional setting for viticulture. Its mix of sandstone, limestone, and clay soils ensures excellent drainage, while the elevation and exposure bring balance between ripeness and freshness. The cooling breezes and Mediterranean sunshine together create ideal conditions for producing structured, aromatic, and age-worthy wines.
Across 60 hectares of organically farmed vines, the estate showcases a remarkable diversity of soils—from red sandstone and cooling limestone to deep clay-rich layers that nourish and challenge the vines. The vineyards unfold over southeastern slopes at an altitude of 150 meters, enjoying intense Mediterranean sun and the occasional, unpredictable rainstorm. Here, freshness is key, and nature is in command.
Old vines are the soul of the domaine. Carignan over 65 years old, Grenache over 30, and Syrah and Mourvèdre with more than two decades in the ground lend depth, structure, and character to the wines. Their roots plunge into a geological past shaped by time, extracting the richness and complexity that define Ollieux Romanis.
Recognized in 2005 as the only communal appellation of Corbières, Cru Boutenac represents a pinnacle of quality and identity. The wines must meet strict standards, validated by a triple tasting panel, and honor the legacy of Carignan, which remains central to the blends. Each cuvée reveals a harmony of spice, depth, and aging potential—the South at its most noble.
In 2021, a new chapter began with the construction of a contemporary winery. Designed to blend into the landscape and built on gravity flow principles, the facility allows for gentle, energy-efficient winemaking. Natural light floods the workspace, and stainless-steel double-skin tanks ensure thermal precision while minimizing energy use. Four tanks with floating lids offer even greater vinification control. Every detail is designed to support thoughtful, precise winemaking while honoring the rhythms of nature.
