- The Cantalauze estate is a family-run winery located in Occitanie, near Albi, on the limestone plateau of Cordes-sur-Ciel, at the northern edge of the Gaillac appellation.
> 9 hectares of vineyards surrounded by hedgerows, woodland, and natural meadows
> Clay-limestone soils at 300 meters above sea level (plateau cordais)
> Certified organic (AB) and under the Nature & Progrès label since 1982
> Passionate, well-trained winegrowers: viticulture & oenology at Agro Montpellier, with international experience
> 8 indigenous Gaillac grape varieties
> Living soils: no ploughing, mechanically decompacted, no inputs
> Hand-harvested grapes, transported in small crates, table sorting, gentle transfers via conveyor belt and peristaltic pump
> Fermentations with native yeasts
> Temperature-controlled stainless steel and concrete tanks
> Ageing in horizontal clay and sandstone eggs, barrels, and demi-muids
> Pét-nat sparkling wines riddled on racks and disgorged by hand
> Average yields: 45 hL/ha; annual production: around 40 000 bottles
