- Description
- Domaine de Cantalauze is a small family estate of 9 hectares perched at an altitude of 300 meters on the limestone plateau of the Gaillac appellation.
Our wines are natural:
- Since 1982 we work living soils, without inputs, using no-till practices and surface composting.
- Our vines are surrounded by hedges and woodland, and a diverse natural meadow grows at their feet.
- Fermentations are carried out with indigenous yeasts, and our wines not exceed 25 mg/l of total SO₂.
Our wines are expressive:
- The vines are pruned in cordon to promote nutrient reserves,
- Trellised up to 2.20 m to optimize photosynthesis,
- And we preserve the integrity of the grapes through manual harvesting, crate transport, and gentle transfers using conveyors, peristaltic pumping and with a pneumatic pressing.
Our wines are precise:
- The clusters and berries are sorted on a table,
- Our winemaking takes place in temperature-controlled stainless steel and concretevats,
- with impeccable hygiene ensuring finesse and aromatic purity.
Cantalauze is the meeting point between a living terroir, indigineous grape varieties, and meticulous care at every stage.
