- Nova Solis means "new sun." Located in the heart of the Terrasses du Larzac appellation area in the Hérault valley, we produce great wines that reflect the freshness of our terroir. Come and discover our estate, an appellation, our sun. The estate is located in the commune of Jonquières, in the Hérault region, 40 km northwest of Montpellier on the foothills of the Larzac plateau. We work 6 hectares of vines aged between 15 and 65 years old, with the greatest respect for nature and promoting biodiversity. The pruning wood is shredded on site and adds organic matter to the soil, the inter-rows are grassed over, and we work under the rows mechanically using an inter-vine. We have been AB certified since the 2020 vintage. We take care of each vine to promote the sustainability of the estate and ensure that nature rewards us.
The estate is planted with black grape varieties: Grenache, Syrah, Carignan, and Cinsault, three of the main grape varieties to claim the Terrasses du Larzac appellation. The latest arrival at the estate: a 45-year-old white Carignan pruned in a goblet shape.
Each grape variety is harvested at optimum ripeness. Harvesting is done manually between late August and late September for late-ripening grape varieties (Carignan). Sorting is performed by plot. Harvesting is done only during cool mornings.
The cellar, located in the middle of the plots, allows for better management of inputs into the cellar.
"90% of the work is done in the vineyard," is how we work. The care given to our plots allows us to obtain healthy, balanced grapes ready to make great wines.
One vat – one grape variety – one terroir.
The grapes are vinified separately using traditional harvesting (fully destemmed). The vatting periods vary in length depending on the profile of the grape variety we are seeking, while minimizing inputs as much as possible.
