Description: In the heart of Salento, nestled between the rocky landscapes of the Adriatic Sea and the sandy shores of the Ionian Sea, lies Cantina Fiorentino. Founded in 2014 in Galatina, in the province of Lecce, it incorporates Cantina Valle Dell'Asso, a historic winery.
Cantina Fiorentino offers a wide range of organic Salento wines, crafted according to the most demanding principles of sustainable development. Led by Pierantonio Fiorentino, an entrepreneur specializing in renewable energy and biosustainability, the winery produces exclusively organic wines, committed to respecting and preserving its terroir and minimizing its fossil fuel consumption through highly energy-efficient buildings and systems. The two sites of the Galatina winery have been restored and modernized to realize Pierantonio Fiorentino's dream: to apply energy principles to winemaking. On one side is the former Folonari factory—from which, at the beginning of the 20th century, musts and blended wines were shipped to other Italian regions—whose restoration uncovered several concrete vats used for vinification and aging. On the other side stands the historic Valle dell’Asso building, dating from 1920, whose acquisition in 2017 quadrupled the vineyard's area, bringing it to 100 hectares.
