- My name is Sébastien Galtier, and I am a winemaker at Mas des Colibris in Gignac in the Hérault region, 25 km northwest of Montpellier.
I was born and raised on my family's mixed farming/livestock farm in Aveyron. For me, working the land is a noble profession.
After a long career as a rugby player and a shorter one as a civil servant, I decided to change careers. As I approached my forties, the call of the land was too strong, and my farming roots caught up with me: I would become a winemaker!
After two years of searching, in 2013 I finally found the rare gem I was looking for: a 10-hectare island of vines in a preserved natural environment, on high-quality terroir with vines certified organic since 1999.
We produce wines under the AOP Grés de Montpellier, IGP Saint Guilhem le Désert, and Vin de France appellations.
We work as naturally as possible in the vineyard and in the cellar.
The grapes are harvested by hand in small crates and sorted in the vineyard. Fermentation then takes place using indigenous yeasts (no selected yeasts are added).
This gentle vinification process allows us to produce authentic wines that reveal their terroir.
All wines have always been certified organic and have been labeled DEMETER biodynamic since 2020. Some vintages also have the Vin Méthode Nature label.
