- Domaine de la Patience is located near the Pont du Gard, between Nîmes and Avignon, in the Costières de Nîmes appellation and the Coteaux du Pont du Gard IGP, on the edge of the Côtes du Rhône.
It was in 1994 that Christophe AGUILAR, after a spell as director of a cooperative, took over the family business, which consisted of just a dozen hectares of IGP Coteaux du Pont du Gard. Wanting to make his own cuvées, he bought a fine wine-making cellar dating from 1930 and undertook a lengthy process of replanting new plots on the edge of the garrigue. Keen to respect the fruit of his land, he converted to organic farming and, in 2008, obtained organic certification, banning all use of pesticides.
Christophe Aguilar vinifies his own cuvées with total respect for the fruit, preserving natural yeasts, controlling vinification temperatures and filtering his wines as little as possible. He limits sulphiting to the point of making certain Nature cuvées without sulphite in order to preserve the expression of the fruit. This means harvesting perfectly healthy grapes, maintaining impeccable hygiene in the cellar and keeping a very close eye on the development of the wines in the vats.
His wines are then carefully selected, blended and bottled on the estate, and stored under optimum conditions in his large air-conditioned cellar to preserve their freshness and originality.
In this way, he chooses to help respect the ecosystem and the terroir he preserves by growing his vines organically, and perpetuates his vineyard by choosing
grape varieties suited to the region.
