Description
La Chouette du chai (The Owl in the winehouse) is a new estate of 19 hectares of organic vines in the Pic Saint Loup terroir. The winemaker, Sylvie Guiraudon, and her fellow winegrowers adopted an approach that respects the soil, vines and wine, where organic farming and biodynamics are an established philosophy. They are grateful to work hand in hand with the Pic saint Loup terroir which is a seamless blend of vegetable and mineral.
La Chouette du Chai boasts two types of soil. In La Combe de Mortiès, the 13-hectare vineyard flourishes on chalky limestone Lias dating from the Jurassic period.
Lying at a considerably higher altitude, the terroir of La Figarède had never had vines growing in it, so the land was explored, analysed and cleared. Here the soil is younger, consisting of Inferior Oolite limestone (Cazevieille plateau). In the La Figarède terroir, all new plantations involve rooting cuttings, a method designed to foster the quality of the root system by using plants from rigorously selected old varieties.
