- Founded in 1990 by Jean-François and Cathy Izarn, the adventure of Borie la Vitarèle began with the conviction that the terroir here still had much to say.
In a valley surrounded by green oak forests, meadows, and garrigue, Borie la Vitarèle today is a beautiful 70-hectare estate, of which only 18 hectares (in the AOC Saint-Chinian) are planted with vines. It’s a human-scale operation that allows them to work with artisanal precision and care.
Their practice of natural viticulture (ECOCERT certified since 1998), inspired by the principles of biodynamics, respects the life of the soil and the vine. Harvesting is done entirely by hand.
In the cool cellar, the alchemy of indigenous fermentations unfolds through gentle, minimalist winemaking — a process more akin to a slow infusion.
Following the accidental passing of Jean-François in April 2014, Cathy, their daughter Camille, and her partner Ulrich took over the estate. Since 2017, it has been Camille who crafts the wines of Borie la Vitarèle. Together, they continue to create unique, authentic wines of terroir, expressing the harmony and character of a singular place — truly inimitable.
