- Description
- Sauta Roc (Jumping Rocks) is a family estate situated in the heart of the Languedocian garrigue (scrublands) in the municipality of Vailhan. It includes 8 hectares of vines, 1 hectare of olives, and 10 ares of almond trees.
Our domaine, created in 2016, is distinguished by its artisanal practices: the grapes are meticulously harvested by hand and vinified in our cellar.
Thanks to a unique, volcanically influenced terroir composed of schistes (shale) and limestone we manage to capture a certain minerality that gives our red and white wines a unicity (unified structure) and freshness.
In the cellar we work with precision to create stable wines with minimal use of sulfites. Our practices are inspired by the natural cycles. Some of these include: spontaneous fermentations, winter rests, racking that follows the lunar phases and seasons, etc.
