- The estate, which covers around 30 hectares, is located on the lower slopes of the southern face of the Luberon massif, close to the Etang de la Bonde, the only substantial lake in the massif.
The strength and richness of our wines lie largely in the diversity of our Oligocene soils, made up of marl, limestone and sandstone with occasional sandy clays (safres) where the vines sink their roots to extract this mosaic of flavour. It is not uncommon to find fossilised traces of fish and insects in the limestone slabs.
The climate of our vineyards is mainly Mediterranean. However, depending on the topography and exposure of the plots of land, there may be some mountain nuances. The result is harsh winters and more days of frost than in lower Provence.
This typical climate means that the growing season is long, with grapes ripening slowly and evenly. It is not unusual for the harvest to finish 20 days later than in neighbouring appellations. Special care is taken in the vineyards, which are free from chemical fertilisers and herbicides. A great wine cannot exist without a living soil.
We are convinced that quality comes first and foremost from the vineyard. All our work is carried out on a plot-by-plot basis (tillage, grassing, green harvesting, etc.) in order to obtain the quintessence of our terroir. As part of our commitment to sustainable, environmentally-friendly agriculture, Le NOVI is now certified organic. This diversity of soils and climates, combined with our efforts in the vineyard, give Le NOVI wines a subtle, harmonious balance.
