- The Robles family has been dedicated to making wines in Montilla since 1927. At the end of the nineties, the third generation understands that, more than progress, we are in favor of returning.
We cultivate organic grapes with the highest intensity and quality of flavors and aromas that we know, we monitor their natural process and transfer all that richness of the fruit into the wine.
In the vineyard we manage a plant cover that includes native wild species with short roots and nitrogen fixers, such as clover, poppies, legumes. This plant cover releases the necessary nutrients at the optimum time to ensure healthy growth of the vine and high-quality aromas of the grapes, attracts beneficial insects that control pests, improves soil fertility and prevents soil erosion.
In the winery we pay special attention to the use of native yeasts and the physical treatment of the wine. Thus, the fermentation of our wines is carried out with the native yeasts that are present in the soil of the vineyard and reach the winery adhered to the skin of the grape. We make wines that belong to their land.
In our catalog we have wines generosos with alcohol (at 15º) totally natural and integrated into the aromas and flavors of wine of very gastronomic form, with Vermut very special and the primer Brut Nature hecho 100% with uva Pedro Ximénez by the traditional Champanoise method and This year we want to present our first Orange wine, we have recovered the ancestral wine techniques, where the most fermented in contact with the stones, the minimum intervention for a maximum expression of the Pedro Ximénez wine.
