« Castel Viel » est un Faugères d’exception: assemblage de nos plus beaux Carignan et Grenache, élevage de 33 mois. Des tanins fondus contribuent au toucher d’une bouche séveuse, légèrement épicée ; elle appelle un mariage avec des mets festifs. Vinifié sans sulfite, ce 2019 doit sa remarquable stabilité à l'air à l'abondance des antioxydants naturellement présents dans nos raisins cultivés en bio.
