Grenache, syrah, mourvèdre soigneusement choisis, triés, et élevés en futs de chêne. Peu de bois neuf, à peine 15% car on n’aime pas que le bois prenne le dessus sur le terroir – et du chêne français qui apporte des tannins plus fins.
